Buttery Toffee Cookies

1/2 cup sugar
1/2 cup butter, softened
1 egg
1/2 teaspoon vanilla
1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
4 (1.4-ounce) bars chocolate-covered toffee, chopped
            (Substitute 1 6 ounce package (1 cup) milk chocolate English toffee bits)

Heat oven to 350 degrees F.

Combine sugar, butter, egg and vanilla in large mixer bowl. Beat at medium speed, scraping bowl often, until creamy (3 to 4 minutes). Add flour, baking soda and salt; reduce speed to low. Beat, scraping bowl often, until well mixed (1 to 2 minutes). Stir in chopped toffee by hand.

Drop dough by rounded teaspoonfuls onto greased cookie sheets. Bake for 10 to 12 minutes or until lightly browned. Cool 1 minute; remove from cookie sheets.

Yield: 3 dozen cookies
