Walnut Spice Cake

2 1/2 cups all purpose flour
1 cup granulated sugar
3/4 cup brown sugar, packed
1 tsp. salt
1 tsp. baking powder
3/4 tsp. baking soda
3/4 tsp. ground cloves
3/4 tsp. ground cinnamon
3/4 cup shortening
1 1/4 cups buttermilk
3 eggs
1 cup chopped walnuts
Caramel Frosting below

Preheat oven to 350ºF. Grease and flour a 9”x13”x2” cake pan. Beat together all ingredients except for the nuts and frosting, scraping bowl frequently. Stir in nuts and pour into pan. Bake 35 to 45 minutes or until toothpick inserted in center comes out clean. Cool completely then frost with Caramel frosting.

Caramel Frosting

1/4 cup butter or margarine
1/2 cup brown sugar, packed
2 Tblsp milk
1 cup powdered sugar

In saucepan melt the butter and stir in brown sugar. Heat to boiling, stirring constantly. Boil and stir over low heat for 2 minutes. Stir in the milk, return to a boil then remove from heat. Cool to lukewarm and gradually add the powdered sugar. Place saucepan in bowl of cold water; beat until smooth and spreading consistency.
