Yummy Taco Casserole
2 cans Taco Bell brand refried beans
2 lbs ground beef
2 pkgs Taco Bell brand taco seasoning
2 cups water
1 pkg Farmhouse brand Mexican style rice
1 can mexicorn
1 16 oz bag shredded mexican blend cheese
2 cups broken yellow corn tortilla chips (not the thin, crispy kind...you want the coarse, thick yellow corn tortilla chips for this recipe so that they don't get soggy and mushy)
1 can chopped olives
Preheat oven to 350°. Prepare the Mexican rice according to package directions and set aside. Put 2 cups of water into a frying pan, and add the ground beef and both packs of taco seasoning. Bring to a boil, breaking the ground beef into crumbles. Boil over medium heat until most of the liquid has cooked down and meat is cooked.
Mix the rice, ground beef mixture (drained of any remaining liquid) and Mexicorn in a bowl. Crush 2 cups of tortilla chips into bite-size pieces and stir into beef/rice mixture. Set aside. Spread both cans of refried beans on the bottom of an ungreased 9"x13" baking dish and spread the beef/rice/chip mixture on top of it. Top with chopped olives and place in oven. Bake for 30 minutes, then top with shredded cheese and return to oven and bake until cheese is melted.
Top each serving with some sour cream...yummy!!!!
